Spiced Apple Muffins

ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 cup plain yogurt
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 cups finely chopped apples
 

instructions

  1. Preheat the oven to 375°F. Grease a 12-cup muffin pan or add cupcake liners.
  2. In the bowl of an electric mixer, beat together the butter, granulated sugar and brown sugar until fluffy, 1-2 minutes.
  3. Add the egg and yogurt. Mix well.
  4. Add the flour, baking powder, baking soda, salt, and spices. Beat on low speed until just combined.
  5. Add the chopped apples and mix until just combined. Do not over-mix.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake the muffins for 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

The muffins can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 – 4 hours on the countertop before serving. To reheat, wrap individual muffins in aluminum foil and place in a preheated 350°F oven until warm.
