Scrub potatoes. Peel (if desired) and chop into chunks
Boil all ingredients for 40 minutes, or until potatoes are tender
Remove sausage, and cut into 1″ slices
Some people like the potatoes and kale mashed together: mash if desired
Serve with butter and vinegar for the potato/kale seasoning
