Farmer Sausage & Spinach Gnocchi

ingredients
- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 2 cloves garlic minced
- 1 lb. farmer sausage
- 1/4 cup wine or chicken broth
- 1 can Italian diced tomatoes
- 2 Tbsp. dried Italian herbs or seasoning
- 1/2 tsp paprika
- 1 can (15 ounces) white kidney beans
- 1 package gnocchi (16 ounces)
- 1 and 1/2 cups fresh spinach ~4-5 ounces
- 1/2 cup freshly grated mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
instructions
- Chop onion, mince garlic, and coin the sausage.
- Preheat oven to 425 degrees F.
- In a large skillet, fry onion in olive oil for 4 minutes. Add garlic and stir for 30 seconds.
- Add the farmer sausage along with Italian seasoning and paprika. Cook over high heat for 3-4 minutes.
- Add wine or broth, undrained tomatoes, rinsed and drained kidney beans, and uncooked gnocchi. Stir until combined. Gently stir in spinach and cook until it wilts.
- Transfer into a 9×13 pan and top with cheeses.
- Bake for 20 minutes and serve.
